This position is responsible for the operations of The Chocolatier Restaurant, Bar + Patio and Milton’s Ice Cream Parlor inside Hershey’s Chocolatetown.
The Chocolatier Restaurant, Bar + Patio is a full-service restaurant featuring past and present pieces from the Hersheypark ride collection, innovative fare with hints of chocolate, craft cocktails, signature desserts, and more.
Milton’s Ice Cream Parlor is a vintage-style ice cream parlor serving up scooped-to-order creations from more than 12 rotating flavors of house-made ice cream, an impressive selection of Hershey’s candy toppings, decadent sauces, and more.

Job Functions (Items marked with an asterisk are essential functions of this position):
Lead and enforce operational strategies for the growth and development of The Chocolatier Restaurant, Bar + Patio and Milton’s Ice Cream Parlor. Ensure that all initiatives adhere to brand standards.*
Identify opportunities to improve guest experience and grow the business. Monitor guest feedback and understand guest service trends and hospitality standards. Take corrective action where needed.*
Establish policies and procedures to maintain and adhere to all safety, health, and sanitation standards as well as all LCB laws and regulations.*
Establish and implement operational goals and metrics to measure restaurant success and identify areas for improvement. Enforce achievement of goals and develop solutions as needed to continuously reach goals.*
Develop business growth strategies by creating and implementing marketing strategies to grow revenue (including menus and special events), in conjunction with other Hershey Entertainment & Resorts properties.*
Develop and propose annual operating budgets; monitor budget performance throughout the year; develop and update forecasts; identify variances; take corrective action or seek variance approval where budget gaps occur.*
Build and motivate a successful team of managers and employees. Effectively delegate work, train staff, and reward employees in order to grow a strong and stable team.*
Work directly with the culinary team to develop menus, seasonal programs, unique offerings, and creative elements to drive guest demand.*
Work collaboratively with management teams and human resources to develop and implement effective sourcing, hiring, training, and scheduling strategies to ensure that established staffing and labor costs are met.*
Partner with the Milton Hershey School through existing and new programs i.e. CTE, Prostart, coop and interns, and other methods to support our Core Purpose.
Build synergies with Restaurant Group, Hersheypark team, and Hershey Entertainment & Resorts by creating a culture of teamwork and collaboration.*
Perform other duties as assigned.
Minimum of 5 years of related experience.
Industry Experience - Food & Beverage
Industry Experience - Amusement Park
Minimum of 5 years of supervisory experience.
Proficient working with details on a daily basis for prolonged periods of time.
