This position is responsible for the culinary activities of The Chocolatier Restaurant, Bar + Patio and Milton’s Ice Cream Parlor inside Hershey’s Chocolatetown. The Executive Chef is also responsible for kitchen staff management, hiring, training, retention, food preparation, financial controls and results, food safety, quality and presentation of product.
The Chocolatier Restaurant, Bar + Patio is a full-service restaurant featuring past and present pieces from the Hersheypark ride collection, innovative fare with hints of chocolate, craft cocktails, signature desserts, and more.
Milton’s Ice Cream Parlor is a vintage-style ice cream parlor serving up scooped-to-order creations from more than 12 rotating flavors of house-made ice cream, an impressive selection of Hershey’s candy toppings, decadent sauces, and more.

Job Functions (Items marked with an asterisk are essential functions of this position):
Supervise food preparation, handling, and storage in order to ensure compliance with all sanitation, health and safety requirements, including documentation and training.*
Control labor and operating expenses through effective planning, budgeting, purchasing decisions, and inventory control methods while focusing on creative cost control and revenue generating solutions to maximize profit. Monitor food production, ordering, and waste. Connect daily cost management with profit/loss achievement.*
Effectively plan and develop menus considering factors such as product availability, food and service cost, market trends/conditions and business volume. Assign prices for all menus that result in a net profit.*
Partner with the front-of-the-house and other properties to achieve both department and company goals. Collaborate with management on long-term strategic planning.*
Identify staffing needs; interview and select kitchen members. Effectively schedule, train, motivate, and develop staff. Create programs to retain kitchen staff.*
Drive the execution of superior food quality and standard adherence. Prepare daily food production sheets, analyze recipes and plate presentation. Perform line checks and other quality controls to ensure a consistent product. Instruct staff on food preparation and adhering to recipe guidelines.*
Synergize with both the Restaurant Group and the Entertainment Complex for the purpose of growth, collaboration, and sharing of best practices.*
Coordinate support for our Milton Hershey Students through training, co-op's, Prostart, and internship programs, all to enhance the relationship between HE&R and the Milton Hershey School.*
